so which i should buy

Im also planning to overclock these so will be buying a air or liquid cooler or maybe a new cabinet instead of cooler. also looking forward on buying SSD. Anyone is fine let me know if you know any

Depends if you want 1440p, if you are just trying to match the resolution to your GPU's performance then I'd say go for the 2700x, on top of that for gaming, if you are gaming at a decent distance there won't be much of a difference between 1440p and 1080p, if any in many games.

1080 Ti is totally capable of 1440p - I've been using 1440p myself with 980 Ti for over 5 years and trust me it's worth it IF you get a decent monitor,
speaking of Ryzen, 6 cores are probably enough, neither of those cpus overclock well beyond 4.1GHz so depends what else would you do except gaming,
of those 2 options I would definitely go 1440p + 2600
speaking of cooler and case, I have Fractal Design Define R5 and big Noctua NH-U14S air cooler, perfect combo imo, handles my 6-core 4.3GHz i7-5820K fine,
about SSD, you can really pick whatever cheapest 500GB SATAIII model you can find, it will be worth it, I have Samsung 850 EVO and 860 EVO, solid choices though not among cheapest

I just got 3440x1440 yesterday, it's a leap forward from 2560x1440, but noticeably more expensive
