Elden Ring requires a Radeon RX Vega 56 8GB graphics card with a Core i7-8700K 6-Core 3.7GHz or Ryzen 5 3600X 6-Core 3.8GHz processor to reach the recommended specs, achieving high graphics setting on 1080p. Elden Ring needs a Core i5-8400 6-Core 2.8GHz or Ryzen 3 3300X 4-Core 3.8GHz processor coupled with a GeForce GTX 1060 to get it to run minimum system requirements. This will return around 30FPS at 720p screen res on low graphics settings, but you can also adjust the settings further to tweak. Minimum RAM requirements are 12 GB system memory. Your graphics card will need to be capable of running DirectX 12.00. In short you need a 5 year old PC for best Elden Ring performance.

It's also worth noting that the 6600k has been overclocked to 4.10GHz with possible room for more.

You can run this game quite easily. You don't need to sit at low. Could probably do reasonably well at medium high settings, if not high.

You'll be able to run it, but your VRAM is a limiting factor, and your CPU is relatively weak for this type of modern game. If you can maintain above 40 FPS at medium, I would be surprised.

I have your exact setup but with a 1600AF (virtually identical to a 2600). My guess is I'll be able to run this at ~45fps on medium 1080p.
