My only complaint is the amount of noise raytracing creates. DLAA cleans it up a lot, but that means you can't use DLSS.

Mostly just the games default, unless it's really obviously too big or small. The only time it's really important to set is racing games.

Same monitor I've got, they're great. My 2080 is dipping as low as 45 FPS in just a couple of titles, which is about as low as I can stand even with Gsync, so I definitely wouldn't want to have worse...
